Southern-influenced French cooking is the working register here: appetite before ornament, memory held in check by technique, and dishes built to eat well before they are dressed for the room. In Slade Rushing’s documented career arc, the lineage is not assigned to a single mentor; it is carried through kitchens, operator roles, and plates. The Climb
Entry-level restaurant work teaches speed, repetition, heat management, and the direct transaction of feeding people. For Slade Rushing, that first practical contact came at Papa Gino’s Pizza, before formal training at Johnson & Wales University and Johnson & Wales gave the work a professional frame. A culinary role at Jardinière in San Francisco placed that foundation inside a room associated with precision and control. A later culinary role at Jack’s Luxury Oyster Bar in New York shifted the tempo to a tighter urban service rhythm, where appetite, timing, and execution have to meet without excess explanation. Restaurant ownership changes the craft because the plate is no longer separate from labor, guests, cost, identity, and daily continuity. Rushing’s co-owner/operator role at Longbramch in Abita Springs, Louisiana, until 2007 put him inside that full mechanism. In 2007, his co-owner/operator role at MiLa in New Orleans (2007–2014) gave Southern ingredients and French structure a more personal working language. His executive chef role at Brennan's Restaurant in New Orleans (2014–2019) placed that language inside a dining room shaped by New Orleans ritual, expectation, and inherited forms.
Today
Egg Yolk Carpaccio at Brennan’s worked through a compact set of contrasts: grilled shrimp with andouille vinaigrette, egg yolk, and crisp shoestring sweet potato fries. The dish used smoke, spice, fat, and crunch without hiding the point. It showed the Southern-French register associated with Rushing’s cooking as a matter of balance and appetite rather than decoration. Eggs Sardou at Brennan’s was revised by replacing English muffins with breaded and fried artichoke bottoms and using a sauce with tomato, chervil, and champagne vinegar. The change kept the dish recognizable while rebuilding its base and sharpening its line. Artichoke altered the structure and texture; tomato, chervil, and champagne vinegar brought herb and acid into the sauce without removing the dish from its known form. The root beer float at MiLa, named by Rushing as the dish he was most proud of, sits in a different register from carpaccio, andouille vinaigrette, champagne vinegar, and artichoke bottoms. Its craft is proportion, temperature, sweetness, creaminess, and restraint. A simple dish has little cover; it either tastes complete or it does not.
