The Climb
Working in a butcher shop at about 14 gave Stuart Collins an early grounding in handling, pace, and the practical side of food before he moved into professional kitchens. That progression runs through City Rhodes, Gidleigh Park in Devon, and Restaurant Gordon Ramsay in London, where the standards were exacting and the work relied on repetition as much as flair. The next stage took him to New York, where he joined the brigade that helped set up Gordon's New York restaurants at Restaurant Gordon Ramsay and Maze at The London NYC, before moving on to head chef at Maze in The London NYC, New York. The same accumulation of experience continued in Cheshire, where he became executive chef at Abode Hotel, widening the scope from a single kitchen to the coordination that hospitality demands. In 2011, Collins also worked as chef on various restaurant concepts / hospitality projects at Qatar Foundation in Doha, Qatar, adding another operating context to an already broad career. Since 2017, that line of work has resolved into Docket Restaurant in Whitchurch, Shropshire, where Stuart Collins is co-owner and chef.
