Chef Suu Khin of Burmalicious in Houston, United States, came up first in Burma, in her grandmother’s kitchen and garden, where technique, labor, and memory were part of the same lesson. Long before a restaurant name entered the record, she was learning to pound ingredients by hand and to read a plate as a carrier of family knowledge. That early training made food more than sustenance: it was a working language.

Training in Massachusetts and work at Dad’s law firm in Burma gave Suu Khin a path that moved between disciplines, but the kitchen remained the steady center. The distance between those settings did not erase the pull of Burmese cooking; it clarified it. Since 2015, that pull has taken form at Burmalicious, where she has served as founder and chef and built a place for Burmese food that speaks from memory without staying trapped there.

Laphet, a featured dish, is fermented tea leaf salad with tomato, cabbage, Thai chile, fish sauce, lime juice, mixed nuts, pepitas, sesame seeds, and fried garlic. Duck Puff sets braised duck in puff pastry with chicken liver pâté, five spice, sweet soy, hoisin, caramelized onions, and mango sriracha. Mohinga brings together catfish, lemongrass-catfish broth, rice noodles, cod-shrimp cake, chickpea fritter, pearl onions, cilantro, and lime.
