Coming Up
Sushi apprenticeship in Tokyo trains for repetition before authorship. Tadashi Yoshida began there, learning a form where every motion is counted and every detail is carried forward from one hand to the next. That early discipline set the terms for the work that followed. Kitchen time at Yoshino Zushi / Sushi-ya no Yoshino in Seki, Gifu Prefecture (1995–2012) extended that training over more than a decade. The period at Sushi no Yoshino in Nagoya, Aichi Prefecture (2012–2018) continued the same line: steady advancement, closer control, and a practice built on exactness rather than display. In both kitchens, the craft deepened through duration. Since 2021, Tadashi Yoshida has held the commanding post of Head Chef at Yoshino in New York City, carrying a sushi career forged in Japan onto one of the most scrutinized culinary stages in the world. He also serves as chef of Tabkeaw. The work in both posts rests on the same principle: small elements set the shape of the whole.
