i. Biography
Takashi Yagihashi is Japanese and known for a style that joins French technique with Asian reference. The work sits in the space between discipline and instinct: exacting on the plate, but open to memory, comfort, and improvisation.
The Climb
Training at Tokyo Design School gave Takashi Yagihashi an early base before his career moved through a sequence of kitchens that kept widening its range. The throughline is not a single fixed method, but a practice shaped by movement, adaptation, and repeated refinement. At Tribute in Farmington Hills, Michigan (from 1996), his name began to travel beyond the room. At Okada in Wynn Las Vegas, Las Vegas, Nevada (from 2005), that approach was placed inside the polished pressure of a major resort kitchen. Noodles by Takashi Yagihashi in Macy's, Chicago, Illinois brought his work into a more public, branded setting, while Takashi in Chicago, Illinois (2007–2014) put his own name at the center of the concept. Later, as owner/operator at Slurping Turtle in Chicago, Illinois (2011–2018), the menu reflected his interest in ramen and noodles with directness rather than ceremony. Today, Takashi is chef/owner of Pernoi (since 2019), a role that continues a career built around clarity of intent and controlled range.
