Professional bar work often starts before the bar: in the repeated, necessary labor that keeps service moving. Around 20 years ago, Tara Wong was a teenage dishwasher and kitchen worker in Detroit, where hospitality was learned through pace, cleanup, repetition, and the pressure of doing essential work correctly.
