The early progression ran from cook at Family's restaurant in Annandale, Virginia, from 1972 to 1975, to Chef de Partie at the Springfield Hilton in Washington, D.C. (1977–1979), then Sous Chef at the Washington Sheraton Hotel (1979–1982). The saucier post at Le Cirque from 1982 to 1984 placed him inside a classical station where reduction, seasoning, timing, and service pressure are the work. New York kitchen leadership followed through chef roles at Annabelle's in New York City, the Polo Restaurant at the Westbury Hotel (1988–1990), and Prix Fixe.
