The Climb
In the heat of service, the first lesson was labour: Theo Clench started as kitchen porter at Brighton restaurant in Brighton, where hierarchy is steep, pace is unforgiving, and every movement matters. From there, chef roles at The Stafford Hotel and Trinity brought different tempos of disciplined cooking, before greater responsibility arrived first as sous chef at Bonhams Restaurant and then as head chef at Bonhams Restaurant. The progression reads as a steady tightening of the screws: each step asked for more judgement, more control, and more of the instinct that turns repetition into confidence. Development work at The Clove Club required both imagination and exactitude, and that was followed by the head chef role at Portland Restaurant in Fitzrovia, London. By then, the through-line in Theo Clench’s career was clear. Even as the titles changed, the same question kept returning from kitchen to kitchen: how to make the most of the simplest ingredients without hiding behind excess. From 2020, Theo served as executive chef at Akoko, then moved on to become head chef at Cycene in Shoreditch, London (2022–2024). Today, Theo is chef of IGNI.
