i. Biography
Thomas Allan is the Executive Chef at The Modern, a two-Michelin-starred restaurant in New York City's Museum of Modern Art, where he was promoted in February 2020 after serving as Chef de Cuisine since 2014. Born in England and raised in Canada, he began his career as a line cook at Blue Smoke in 2007, trained at the International Culinary Center, and worked at Eleven Madison Park, Per Se, and as sous chef to Yannick Alléno at Le Meurice in Paris. At age 22, he competed as commis to James Kent in the 2010 Bocuse d’Or USA, winning the national title and placing 10th worldwide.
