The Path
At Northcote Manor, Tom Parker worked as sous chef from 2011 to 2013, a period that put structure around the basics: pace, precision, and the pressure of a professional kitchen. Those years mattered because they did the unglamorous work of building habit and control, the sort of training that stays in the hands long after service. In 2013, he moved into the Head Chef role at The White Swan in Fence (from 2013), where the remit shifted from supporting a line to setting one. From there, the restaurant and the village became the frame for his work, with the menu, room, and daily rhythm all tied to the same place.
The Work Today
At The White Swan in Fence, Tom Parker is Head Chef and owner, and the cooking is built to match the room rather than override it. “We like showing our customers a good time here. It doesn’t mean that standards drop; it’s just more relaxing and a more enjoyable setting to be in.” That balance is the point of the kitchen. The standards stay exact, but the dining room is allowed to feel easy, with no pressure to turn the meal into something formal for its own sake. Seasonality sets the pace, Lancashire produce gives the menu its local register, and the result is Modern British cooking that stays grounded in the place it serves.
