The Climb

Technique and rigor start at Nichibei College, where Toshio Tsutsui trained before entering professional kitchens. That foundation set the terms for the rest of his work: exacting standards, attention to detail, and a practice built on consistency. Structure outside the kitchen also played a part. Tsutsui served as a soldier in the United States Army, a period that added a different kind of discipline to his formation. The demands of service — order, endurance, responsibility — sit behind the way he has approached professional cooking. At Nishida's Place in Salt Lake City, Utah, Tsutsui worked as chef, moving from service life into the daily rhythm of a restaurant kitchen. There, Japanese cuisine became a working craft rather than an abstract study, sharpened by the need to keep pace, stay balanced, and deliver with care. In 2009, Tsutsui moved to Midori Restaurant in Mallorca, Spain, where he continued as chef. The setting changed, but the requirements did not: consistency, control, and adaptation to a new place and clientele. That shift added another layer to his practice, broadening the practical reach of a cuisine he had already spent years refining. At TA-KUMI in Marbella, Spain, Tsutsui works as chef-proprietor, bringing training, service, and restaurant experience into one role. The position keeps both execution and direction in his hands, with Japanese cuisine remaining the center of the work and the accumulation of earlier posts visible in the final form.
