The Climb

From the bar at Jamie Oliver's Fifteen in Cornwall (from 2005), the work starts where many bar careers do: on shift, in service, and in the daily discipline of making a room function. In 2007, Tristan Stephenson moved into the brand ambassador role at Reserve Brands Group, where the brief would have demanded clear product knowledge, presentational control, and the ability to represent drinks in a commercial setting without losing credibility with the trade. The training floor at The Connaught in London, The Dorchester in London, and The Ritz London Hotel in London added another layer: standards, repetition, and the kind of exacting detail that marks out serious hospitality. From there, he moved into ownership as co-owner at The Worship Street Whistling Shop in Shoreditch, London (from 2011), and then as co-owner at Dach & Sons in Hampstead, London (from 2012), shifting from executing the work to helping define the environment in which it was done. Later, consultant work at Lidl (from 2017) widened the brief again, showing a career able to move between specialist rooms and larger retail structures. Alongside that, he became co-founder of Fluid Movement and co-owner of Purl (since 2010), roles that sit comfortably with a career built on adaptation, commercial awareness, and sustained attention to how drinks culture develops.

Today

Co-ownership at Purl and The Worship Street Whistling Shop sits alongside his work as an IWSC Judge, where experience becomes a framework for judging quality. Tristan Stephenson has also been direct about the terms of the work: “I write books about booze and run long distances.” His other remark lands in the same register: “It's not enough anymore to serve a drink and just to say that it tastes nice.” The point is simple enough for the trade: a drink needs more than balance on the palate; it needs a reason to exist.
