Italian cooking in Hong Kong has often had to work in two registers at once: the discipline of regional product and the service expectations of an international dining room. Umberto Bombana, Italian chef and co-owner of 8 1/2 Otto e Mezzo Bombana (Hong Kong) since 2010, is one of the clearest examples of that trade position. Named restaurants carry an additional burden in the trade: the signature has to be recognizable without becoming formula. Bombana is founder-chef at Tuber Umberto Bombana and chef at Cannubi by Umberto Bombana (Bangkok), roles that keep the cooking tied to depth rather than spectacle and to ingredients chosen to define the plate. White Truffle work depends on timing, aroma, and the refusal to crowd the ingredient. Piedmontese Regional Enoteca Cavour named Bombana Worldwide Ambassador of the White Truffle in 2006, aligning the recognition with the ingredient most closely attached to his public reputation. His own framing is practical: "It is not that I want to be the “King of Truffles” but they’ve given me this nomination for what I do with truffles."
