The Climb
Technical Engineering in Bra gave Valter Fissore a first discipline, but the working education came in the cellar at Cogno Marcarini Winery in La Morra, where he trained alongside Elvio Cogno from 1985 to 1990. Those years established the basics that matter in winemaking: measured repetition, patience, and a tolerance for work that only shows its value later. The apprenticeship was not a side note to the career; it set the method that followed, with technique and instinct kept in balance and excess kept out of the frame. Since 1990, Valter has been proprietor and winemaker of Elvio Cogno, a role that depends on continuity as much as authorship. The work has remained tied to the discipline formed early on: steady decisions, vintage after vintage, and a style built through restraint rather than display.
Today
At Cogno winery in Novello, Italy, the defining craft is still winemaking, and the daily work still turns on the same exchange between vineyard and cellar. Valter Fissore's practice there is about translating place into bottle with patience, then letting time do part of the reading.
