Vineyard first, cellar second
Valter Fissore reads the Ravera fruit before he asks the cellar to speak. As winemaker at Elvio Cogno in Novello, Italy, he works from a discipline formed alongside Elvio Cogno at Cogno Marcarini Winery in La Morra, from 1985 to 1990, and carried into this estate from 1990 onward. Valter Fissore came to wine after Technical Engineering in Bra, a detail that matters less as biography than as method: measure, repeat, wait, correct only when the material asks for it.
At this house, continuity is part of the craft. Fissore is proprietor and winemaker, but the role reads more like a long apprenticeship extended across vintages. The family estate sits in the rolling Langhe hills, with Ravera cru vineyards around it and Barolo DOCG as the central register. Nebbiolo gives the cellar its spine, while Barbera, Dolcetto, and Nascetta widen the language without changing the hand. Fissore’s own words keep Elvio Cogno present in the work: “Elvio was a great teacher, in life and at work, and his memory will live forever in our words and in our deeds.”
Ravera held to a narrow line
The program is small enough for decisions to remain close to the vines: 70,000 bottles annually from 13-15 ha, within a broader estate setting described as 15 hectares of Ravera cru vineyards. The house works sustainably, and the wines named with Fissore’s signature make clear where the attention falls: Barolo Ravera, Barolo Vigna Elena Riserva, Barbera d’Alba “PRE-Phylloxera” DOC, Barolo Ravera Bricco Pernice, and Nascetta.
The rare Nebbiolo Rosé clone in Vigna Elena gives one part of the cellar its own cadence. The pre-phylloxera Barbera vines in the Ravera cru, more than 100 years old, give another. Fissore does not need to make those facts louder. They already set a demanding frame: old wood in the vineyard, a clone tied to a particular parcel, and a cellar asked to preserve difference rather than smooth it away. Structure and purity are the house terms here, not as decoration, but as the consequence of restraint.
The quiet of the Langhe room
The tasting room belongs to the same tempo as the cellar. It is quiet, intimate, and balanced, with the hills around Novello doing much of the work before a glass is poured. This is not a room built to distract from the wine program. It keeps the eye on what Ravera gives, then lets the bottles make their separate arguments.
In that setting, the estate’s rustic and elegant sides meet without ceremony: Langhe light outside, still red wines at the table, the cellar discipline held in the background. The atmosphere carries the family history without turning it into display.
