Early in his career, Victor Arguinzoniz worked as a worker at a flag factory, a practical setting built on material handling, repetition, and precision. Asador Etxebarri has been the fixed workshop for this practice since 1989, with Victor Arguinzoniz as chef and owner. Fire is the source, but the craft is in setting the conditions: distance, intensity, timing, and the point at which smoke supports an ingredient without taking it over. “I just wanted to set up my business and cook with embers because that's when I'm happiest.
