Victor Mercier treats the kitchen as a place for judgment and restraint, not performance, which is why his own description lands so plainly: “We are cooks; we are not influencers. Our first job is to cook for people.” The emphasis is on service, not self-display. That same logic shows up in the second rule he gives for the work: “C'est du bon sens en fait pour faire une bonne cuisine il faut des bons produits.” The point is simple and unsentimental. Good cooking starts with good product, and the rest is a matter of keeping the method clear enough not to get in the way.
