i. Biography
Victor Quintilla is the chef of Lluerna in Santa Coloma de Gramenet. He is also the owner and chef of Lluerna Restaurant in Santa Coloma de Gramenet. “What impressed me most was the freedom there was for everyone to do whatever they wanted, and that courage to do it.” Victor has said.
The Climb
Technique, repetition, and service discipline define the route into kitchens like the ones Victor Quintilla moved through. Escola Muntaner d'Hostalatge i Restauració de Barcelona gave him the basic training, and the rest of the foundation came on the line, service after service, in rooms where pace and precision mattered more than theory. The first positions were practical and exacting: second de cuina at Restaurant Gaudí (1992), then practicant professional at Odissea de l'Empordà (1992). That sequence set the terms of the work. A final stop as cook at Reno (1999) added another service stage before the move into ownership. Since 2001, owner and chef at Lluerna has been the role that gathers those earlier years into one address. In Santa Coloma de Gramenet, Lluerna became the place where Victor Quintilla’s accumulated kitchen language could be exercised under his own name and on his own terms.
Today
Since 2001, he has been owner and chef at Lluerna Restaurant. The current role keeps the restaurant at the center of his working life. It is the point where apprenticeship, line work, and authorship meet in Santa Coloma de Gramenet.
Signature
The signatures attached to Victor Quintilla point to a kitchen that works through contrast and controlled tension. Pumpkin bacon, rosewood and black trumpet ice cream brings together sweetness, smoke, and earth; Pomada Cocktail shifts into a more direct, liquid register; and Rabbit Back stewed with national Lobster sets two different products in a single frame. The common thread is not excess but arrangement: each dish depends on clear composition and on ingredients that hold their own in the same plate.
Recognition
Victor Quintilla has received Michelin Guide, 1 star (2012). Michelin star (2012), Nominated for the Best Chef in Catalonia (2010), and Best New Chef (2013) mark three different forms of recognition across the same period. The nomination for Best Chef in Catalonia (2010) registered a rising profile, the Michelin star (2012) confirmed the consistency of the work, and Best New Chef (2013) acknowledged the force of the kitchen’s arrival.
