Training at Lycée Santos-Dumont gave Yannick Alleno a formal base before the work of learning began in earnest: Royal Monceau, Hotel Sofitel Sèvres, Drouant, and the Scribe kitchens until 2003 each added a different kind of discipline to the same apprenticeship in pace, pressure, and control.
