Yuji Iwasaki is the owner-chef of VELROSIER in Kyoto, Japan, where he fuses Chinese and French culinary techniques, earning promotion to Two MICHELIN Stars in the 2023 Kyoto Osaka Guide for dishes like foie gras-filled monaka wafer cakes and deconstructed gyoza. He founded Kamodashi Chukasoba ROKU nearby, a Bib Gourmand ramen spot using kamodashi duck broth and sharing ingredients with VELROSIER. Starting Chinese cuisine at age 18, Iwasaki innovates through 'disassembly and reconstruction' of dishes after training inspired by Michelin-starred French restaurants.
