Tulane University is where Zach Engel trained before moving into kitchens that rewarded pace, discipline, and clear command. At Shaya Restaurant in New Orleans, he held the line first as Head Chef until 2017, then as Executive Chef in 2017, with each step sharpening the kitchen language that would carry forward into later roles. From 2017 to 2018, Engel served as Culinary Director at Pomegranate Hospitality in New Orleans, a position that extended his influence beyond a single pass. By 2019, he had become Executive Chef and partner at Galit in Chicago, where that same combination of management and kitchen control continued to define the restaurant’s direction.
