i. Biography
The Climb
Kendall College gave Aaron Kabot the formal footing that turns early intent into working discipline. From that base, he moved into some of Chicago’s most watched dining rooms, including a run as Head Chef at The Duck Inn in Bridgeport, Chicago, where the pace of service and the restaurant’s sense of place shaped the job as much as the menu did. In his current role as chef, executive chef, and partner of Chef's Special Cocktail Bar, the work sits at the intersection of kitchen control, menu identity, and a broader house style.
Today
Precision and play define the present tense of Kabot’s cooking. Aaron Kabot’s work at Chef's Special Cocktail Bar is not limited to the pass; as chef, executive chef, and partner, he helps set the tone of a place where food and drinks operate in the same register. The result is a style that moves between comfort and technique, with an eye for texture, rhythm, and contrast.
Signature
The signature list points to range, but not looseness. Aaron’s dan dan noodles, special combo" fried rice, and bone-in pork shank with black bean sauce and charred cabbage show a kitchen working across comfort, structure, and depth. ChiChi Colada and Tanline Express bring a more playful, tropical register into the mix. Taken together, these signatures show a cook using contrast as a tool, not a flourish.
In Their Words “There’s centuries worth of knowledge and inspiration to draw from.” “I have always been interested in exploring that nuance.”
Recognition
Chinese-American cooking is framed here as a body of technique with long memory and technical breadth. Aaron Kabot’s view is direct: “There’s centuries worth of knowledge and inspiration to draw from.” The value is in the methods as much as the result, and he points to that friction plainly when he says, “Many of the techniques are counterintuitive to the European and Western methods I was trained in, which makes them all the more intriguing to me.” That approach keeps the work close to method, history, and detail. Aaron Kabot does not treat the cuisine as a single idea; he approaches it through the particulars that separate broad familiarity from actual understanding. As he says, “I have always been interested in exploring that nuance.”
