Coming Up
The early grammar of the work was learned in a family kitchen in Leicester, where weekends in Father’s kitchen gave Aaron Patterson the basic discipline that sits under serious cooking: repetition, cleanliness, timing and respect for the unshowy parts of the job. From there, the route moved through two of Britain’s most regarded dining rooms, first as a chef at Hambleton Hall, then as a chef at Le Manoir Aux Quat’Saisons. The sequence is a straightforward one: practice, progression, and the slow layering of technique. That same discipline now shapes a role that reaches beyond the pass. Aaron Patterson is Chef Director and Executive Head Chef of Hambleton Hall, while also serving as director of HART HAMBLETON LIMITED (since 1997), director of HAMBLETON BAKERY LIMITED (since 2016), and director of Hambleton Hall LIMITED (since 2018). The remit is managerial as much as culinary, combining day-to-day kitchen direction with longer-range oversight rooted in consistency, precision and continuity.
Where They Are Now
Local game and foraging sit at the centre of the cooking, giving the menu a direct relationship with the landscape around Hambleton Hall. The work is seasonal rather than abstract: ingredients arrive, peak and pass, and the kitchen responds to that rhythm. Aaron Patterson puts the emphasis plainly: “Ingredients that are in season, excite me more than anything.” The line fits the food itself — focused, grounded and alert to what is available now. Seasonality also sets the tone for the kitchen’s internal pace, where the standard is not only what leaves the pass but what can be sustained through service. Aaron Patterson describes one of the job’s core demands as “The creativity required on a daily basis to continue to enthuse our brigade of chefs and excite our clients.” It places the craft in practical terms: keeping a brigade engaged, and keeping the dining room moving with purpose.
Signature
The signature dishes point to a cook working through restraint, texture and place. Morel mushrooms with a Grappa flavoured sauce relies on depth and earthiness, while Vegetable Terrine is built on structure, control and seasonal order. Colwick Cheese Tortellino adds a more intricate register, with technique carrying the dish as much as the ingredient. Taken together, the signatures show a kitchen interested in clarity, balance and detail.
In Their Words “Learning to be a chef is like running a marathon not a 100-metre race. Don’t have too many highs or too many lows.” “The creativity required on a daily basis to continue to enthuse our brigade of chefs and excite our clients.”
