i. Biography
Josh Perlman is a Chicago-based sommelier, beverage director, and managing partner who co-founded the Logan Square restaurant Giant in 2016 and Chef’s Special Cocktail Bar in 2020. Perlman began his hospitality career in Minneapolis before working in San Francisco and Denver, later moving to Chicago in 2004 where he spent eight years as a sommelier and floor leader at Avec. In recognition of his hospitality leadership, he was awarded the Michelin Guide Chicago Service Award in 2023.
