Katie Renshaw of Bar Bambi and High Proof

Katie Renshaw starts The Rebel on the Tracks by filling a glass with hot water, then nesting a small tin over a large tin of hot water so the cocktail warms before it ever touches the guest's hands. To meet her work now, start at Bar Bambi, the Chicago bar she founded at 1703 W. Chicago Ave., or follow her partnership with Daniel De Oliveira at High Proof.

Where to find Katie Renshaw's Bar Bambi work now

Renshaw is the founder of Bar Bambi, and she is also co-owner of High Proof.

Bar Bambi is at 1703 W. Chicago Ave., and it opened on Saturday, Feb. 14. For a drinker tracing Renshaw's hand, those coordinates matter: this is where the program has to live in real time, under sound, pressure, and the uneven rhythm of service.

Before Bar Bambi, Renshaw had spent more than a decade in the business, including at Chicago bars such as Moneygun, Billy Sunday, Etta, GreenRiver, and The Aviary. A bartender who survives that range treats technique as insurance, the method that keeps a drink legible when the room is moving faster than the recipe card.

Her recognition has come through competition as well as service. Renshaw won Speed Rack Midwest in 2017; she won Italicus Bar Artist of the Year in 2018; she won US World Class Bartender of the Year in 2019. Read those titles against the glass in front of you: pressure, interpretation, and method have all been tested before service begins.

Renshaw's Chicago bar apprenticeship moved from GT Prime to The Aviary

Renshaw left her day job to work as a bartender in Chicago. Leaving salaried rhythm for the bar means prep before the doors open, service by increments of seconds, and close-down when the last glass is washed and the fruit is no longer usable.

Her Chicago path did not stay in one style of room. Renshaw was a bartender at GT Prime. She worked at Moneygun, Billy Sunday, GreenRiver, and The Aviary. From GT Prime to Moneygun, Billy Sunday, GreenRiver, and The Aviary, the useful takeaway is range: one room teaches brown spirits, another hotel pace, another how a cocktail lands before a plate reaches the pass.

At Etta, the role sharpened into management. Renshaw was Bar Manager at Etta in Chicago. The hand still matters, but so does the list: batching, citrus pars, glass counts, station setup, training language, the judgment to know which drink should be built to order and which should be stabilized ahead of service.

Her next chapter extended from individual station work to program building. Renshaw co-created the drinks programme at Beef & Liberty Bar, a cocktail venue on the second floor of Hawksmoor. A co-created program asks for a different form of authorship. The drink has to carry the maker's conviction and be teachable; it has to hold across hands.

Renshaw won Miss Speed Rack Midwest on Sunday night, securing her position as a competitor at the national finals. She was also a national finalist for Heaven Hill Bartender of the Year. In service, a bartender can recover quietly; in competition, the missed motion announces itself. That kind of room trains economy.

How Katie Renshaw builds The Rebel on the Tracks

The Rebel on the Tracks contains Elijah Craig Small Batch Bourbon at 1.5 ounce, Domaine de Canton Liqueur at 0.5 ounce, Masala Chai Syrup at 0.5 ounce, and Hot French-Press Coffee at 2 ounce. Bourbon gives the base. Ginger liqueur and chai syrup set the spice line. Coffee brings heat, bitterness, and steam.

The process is the stronger signature. Renshaw's Rebel on the Tracks is prepared by filling the glass with hot water, filling a large tin with hot water and placing a small tin on top, building the cocktail into the small tin to slowly heat the ingredients, emptying the hot water from the glass, swirling the tin and pouring into the heated glass, whipping cardamom cream in another tin, slowly pouring the cream over the cocktail, and topping it with freshly grated nutmeg. If you order or study the drink, watch the sequence before the garnish: the glass warms so the drink does not lose temperature on contact, and the nested tins heat without scalding.

That is where Renshaw's discipline shows, not in a louder finish, but in sequencing. A hot cocktail exposes weak thinking. Too much heat and the alcohol flattens. Too little and the drink cools before the guest reaches it. Cream without weight sinks or breaks. Nutmeg grated too early goes dull. The method keeps those failures away from the guest.

Flex Yo Hustle shows Renshaw's pressure and texture work

Flex Yo Hustle, another Renshaw drink, uses a different set of tools. Renshaw created the Flex Yo Hustle cocktail. Flex Yo Hustle contains 1.5 oz egg-washed Bulleit Bourbon, 2 oz clarified Granny Smith Apple juice, 0.25 oz Tonka bean syrup, 0.5 oz water, and 2 dashes saline. Egg-washing puts fat and texture into the bourbon. Clarified apple juice gives acid and fruit without pulp. Saline tightens the edges. The drink is built from control points: wash, clarify, dilute, season.

Flex Yo Hustle uses a service method different from a standard shaken sour. Flex Yo Hustle is made by combining the ingredients in an iSi canister, charging with two soda chargers and shaking a few times after each charge, letting it settle for 10 seconds, venting the air by slowly pressing the dispenser lever, then twisting off the top and pouring once all the air has escaped. The iSi canister gives pressure; the settling time protects the pour; the slow vent controls release. The clue for the drinker is texture, since the tool is chosen because the aeration depends on it.

Made By follows the bar hand in Lorenzo Antinori and Bar Leone, the cellar-trained dining room discipline in Bobby Stuckey's story at Frasca Food and Wine, and the kitchen method in John Shields at Smyth. The common thread is not category. It is time on the tools, visible in the smallest repeated motions.

Daniel De Oliveira works beside Renshaw at High Proof

Daniel De Oliveira is co-owner of High Proof with Katie Renshaw. Bar work is rarely solitary, even when a single bartender receives the award, the byline, or the competition call. A program lives through shared standards: how the bottle wells are set, how a bartender describes sweetness, how prep is labeled, how a guest is handed from one station to another without losing the thread of the night.

Moneygun, Billy Sunday, Etta, GreenRiver, The Aviary, GT Prime, Hawksmoor's Beef & Liberty Bar: these are among the Chicago bars and restaurants in her more-than-a-decade path, with Beef & Liberty Bar identified as a cocktail venue on the second floor of Hawksmoor where she co-created the drinks programme. For anyone studying Renshaw's Chicago bar lineage, the station is the through-line: different rooms, different expectations, the same need for a drink to hold under service.

How to access Katie Renshaw's work in Chicago

Bar Bambi is located at 1703 W. Chicago Ave., and it opened on Saturday, Feb. 14. If the point is to taste Renshaw's method rather than read around it, Bar Bambi is the named room to put on the map.

Renshaw is also co-owner of High Proof with Daniel De Oliveira; its own site identifies the partnership at High Proof's about page.

Why Katie Renshaw's Bar Bambi method is worth studying

Renshaw left a day job to work as a bartender in Chicago, then built a career across rooms that asked different things of the same hands. Her more-than-a-decade path includes Moneygun, Billy Sunday, Etta, GreenRiver, and The Aviary; her competition record includes US World Class Bartender of the Year in 2019. The reason to keep studying her is smaller than a title. It is in the warmed glass, the nested tins, the clarified apple, the iSi charged and vented with restraint. Renshaw's work shows how a cocktail program earns its force through method, and that method has to survive service. The next glass will tell whether the station still holds.
