Manual shoot tipping sets the pace before Dr. Simone Adams, winemaker at AdamsWein in Ingelheim am Rhein, brings the fruit toward the cellar. She has held the estate owner and winemaker roles since 2010, keeping vineyard decisions and cellar decisions close enough that one can answer the other. The house itself dates to 1882, but the current discipline belongs to Adams: a doctor of oenology working a small Rheinhessen estate with biodynamics, regenerative viticulture, and a Pinot vocabulary drawn through limestone. Her stated shorthand is elegance and purity, plain terms that become more useful when set against the work. Adams does not treat Ingelheim as a general address. She parcels by geological structure, matching Burgundian varieties to clay, limestone, silt, and sand rather than smoothing those differences into a house blend. Spätburgunder carries the largest share of attention, with Chardonnay, Weissburgunder, and Grauburgunder kept inside the same insistence on site. The estate is small enough for that insistence to remain practical. It is also small enough for the hands to matter.

Limestone before cellar work

The vineyards sit on east-west facing slopes a few kilometres from the Rhine, in a cool pocket protected from northern winds and shaped by calcareous soils. The limestone weathering rock is 50 million years old, and Adams works as if that fact is not a romance but a set of instructions. The estate is given as 10 to 11.5 ha, depending on the account, focused almost entirely on Pinot varieties. Spätburgunder is listed at 5ha and 50% of production, with Chardonnay at 1.5ha; old vines are cited at 40 to 45 years. In the cellar, fermentations start spontaneously with wild yeasts. Red wines may carry partial or complete whole clusters and stalks, then move into wood, with big barrels for village wines and barriques for single-site bottlings. Aging on the lees runs 12 to 18 months. Adams avoids fining and filtering, adding only a modest dose of SO₂ at bottling. The method is not absence. It is restraint with consequences.

A quiet estate in a red-wine town

The room around the work is not built as spectacle. AdamsWein sits in Ingelheim am Rhein, a historic red-wine town in Rheinhessen, with the Rhine close enough to temper the growing season but not close enough to turn the estate into a promenade. The feel is cellar-led: quiet, precise, nature-driven, more concerned with vineyard difference than visitor theatre. The vineyard names give the place its grain. Pares, Horn, Heerweg, Lohpfad, and Auf Dem Haun are not decorative labels; they are the map by which Adams separates clay from limestone, slope from slope, parcel from parcel. In the glass, the program moves between Spätburgunder, Frühburgunder, Chardonnay, Weissburgunder, Grauburgunder, rosé, Brut Nature, and orange wine without abandoning that central discipline. Before harvest, Adams checks whether a bottle such as Spätburgunder Rheinhessen Pares 2020 keeps the site audible.
