    Clay before oak

Clay takes the place of oak in the cellar, where Giusto Occhipinti, winemaker at Azienda Agricola Cos in Vittoria, keeps the wines close to vessel, soil, and hand. His work here reaches back to 1980, when the estate began as a project in southeastern Sicily and took its name from the surnames of its founders. At COS, Occhipinti’s role has never sat neatly in one room. He is named as co-owner and marketing director, and the practical work is cellar and farm stewardship, with the public work of explaining why the estate chose this path before the wider market had a language for it.

Architecture is part of that formation. Occhipinti trained as an architect, and the habit shows in the cellar’s sense of proportion: vineyard, harvest, fermentation, and aging treated as one continuous line rather than separate acts. The method does not lean on display. It asks whether Frappato, Nero d'Avola, Grecanico, Inzolia, and Grillo can keep their shape when the cellar removes the obvious props. In Vittoria, that question has become the estate’s discipline.

    A cellar built around amphora

The decisive move came after the harvest of 2007, when COS removed oak barrels from the cellar and turned to amphora as the aging vessel for its wines. Clay is porous, like oak, but neutral in a way that keeps the imprint of the vessel from overtaking the fruit. The choice suits a cellar committed to indigenous yeasts, low intervention, and farming that treats the vineyard as the beginning of vinification, not its supplier.

The estate farms organically and partly biodynamically, with bush-trained vines described as roughly 10 to 50 years old. The ground is red sandy soil over limestone, a Vittoria signature that makes the roots work for water and nutrients. Irrigation is avoided, even though the region permits it. That refusal matters at the glass: lower yields, firmer fruit, and a red wine language built around Cerasuolo di Vittoria DOCG rather than borrowed power. Pithos Rosso carries that thinking most plainly, with amphora acting as method, not ornament.

Red sand beyond the tasting room

The estate sits in the agricultural south-east of Sicily, in a landscape of red, yellow, and ochre tones, with palms and Mediterranean air marking the distance between vineyard and coast. The room is quiet by nature of the work. Guided tastings and estate tastings happen beside a cellar whose interest is not polish but continuity, the same line running from field to vessel to bottle.

There is bread here as well, paired with wine without turning the visit into theatre. The counter stays close to the farm. In that setting, amphora do not read as antiquarian objects; they read as tools, chosen because the house wants clay, skin, seed, and sand to remain audible. Cerasuolo di Vittoria Classico delle Fontane 2021 is still in the bottle.
