Dong Dang is its take on rice noodles, drawn from a traditional noodle-making technique in Udon Thani, and the dish has appeared with ricotta miso, black squid ink, and salted duck egg. The title remains; the bench work changes.

    Crab Crab Crab works by taxonomy and place. Blue Swimmer Crab comes from Surat Thani, Rice Field Crab Coral from Lamphun, Black Crab Miso from Sakon Nakhon, and Soft Shell Crab Garum from Trang. The course is not a single crab idea repeated for emphasis. It is a map of waters, fields, fermentation, and season. Baan Tepa on Tour, begun in 2023, extends that same habit outside the room, with the team learning from local communities across Thailand and returning that knowledge to the menu. The kitchen also folds waste reduction into the object life of the restaurant, including a project that turns kitchen waste into table decor.

    A family house with a working garden

    The room keeps the memory of a private residence. “Baan” means home in Thai, and “Tepa” draws from Debhakam, the family name; the restaurant uses both meanings plainly, as a frame for hospitality and for the way the property moved from house to culinary space. The interiors are warm and pared back, with the calm of a dining room that does not need bustle to prove its seriousness. Beyond the glass, Tepa Garden gives the room its living edge.

    Service has the formal cadence of a tasting menu, but the house feeling matters. Plates arrive with the sense that the kitchen is telling a story through origin, not decoration: soil, region, family name, crop, technique. The counterpoint is quiet. Wine, cocktails, and non-alcoholic pairings sit around the food rather than pulling attention away from it. In this room, the pass feels close to the garden, and the garden feels close to the plate.

    Baan Tepa is in renovation until 26 August 2026, with a July pop-up planned away from the property and reservations for the reopening to follow. That pause reads less like interruption than bench work on the room itself: the same house, the same garden, and another version of Dong Dang waiting for the pass at Baan Tepa Culinary Space.
