Ceviche before the room fills
Ceviche lands first at Barranco in Zürich: acid, fish, coriander, heat. Head chef José Severino works a Peruvian register shaped for sharing rather than sequence, running traditional ingredients through contemporary technique instead of a fixed canon.
Barranco is built around modern Peruvian fusion, small plates, ceviche, pisco sour, esparragos and berenjena. A dish may begin in Lima, move through Zurich produce, and finish with a texture closer to the Mediterranean or Asia. Christina Tobler Orbegoso owns the house, and her stated aim was to bring Peru's range to a city that had barely met it, from 3,000 potato varieties to the coriander types that run from the Andes to the ocean. The restaurant holds a Michelin Bib Gourmand, but the work is bench-side: the plates depend on contrast, not ceremony.
Acid, pisco, and the shared plate
The program at Barranco is not arranged as a long tasting progression. It works by accumulation, with small plates set down for the table and built to be passed. Ceviche gives the kitchen its most direct test, because the cut of fish, the acid, the salt and the heat have little room to hide. Esparragos brings fermentation and grilling into the same gesture. Berenjena and sweet potato carry the softer side of the menu, while chicharrones, white fish with jalapeño cream, esquites and tostada show how the kitchen moves between Peruvian classics and fusion without losing the point of each plate.
The house also gives real space to vegan cooking. Half the menu is vegan and clearly labelled, and some meat or fish preparations can be adapted. That matters here because the work is not substitution as apology. The method stays focused on intensity: sour against creamy, spice against sweetness, char against a cooled sauce. The pisco sour sits in the same register, tart and aromatic, less a garnish to the meal than a second station beside it.
Murals, counter heat, and Kreis 4 noise
The room carries the color before the food reaches the table. Peruvian murals set the tone, but Barranco avoids the museum version of place; it borrows the social energy of Lima’s Barranco district and lets it run through Aussersihl. Plates arrive for dividing, glasses move, and the noise level rises with the evening rather than being managed out of the room.
There is a terrace shielded by plants, and inside the room the pass feels close enough to the conversation. This is not a hushed dining room built around deference. It is a lively one, modern, unpretentious, and alert to appetite. The counter, the bar, and the shared plate all point in the same direction: food as a social method, not a private performance.
A Peruvian kitchen with a local accent
Barranco’s place in Zürich is narrow and specific: an independent restaurant using Peruvian food as a living vocabulary rather than a costume. The menu can change with the season, but the discipline remains the same, built on ceviche, pisco, potatoes, coriander, spice and the table’s willingness to pass things along.
