    From tartare to the fire

    House made nori chips, fresh Salmon, and dill give Candace Ochoa, Chef at Bazaar Meat by Jose Andres in Las Vegas, one of her clearest plates. She names Salmon Tartare for that reason: not because it needs ornament, but because the structure holds. The chip brings snap, the fish carries its clean weight, and the herb finishes the plate before it turns crowded. Ochoa’s command of this kitchen came by sequence rather than shortcut. She trained at The Art Institute of California, worked as Line Cook at The Bazaar by José Andrés at SLS Hotel in Beverly Hills from 2011, then as Sous Chef at The Bazaar by José Andrés at SLS Hotel in South Beach from 2012. In Las Vegas she moved from Executive Sous Chef at Bazaar Meat from 2018–2021 to Executive Chef from 2021, staying close to the same house as the responsibility widened.     Bazaar Meat spent 11 years at Sahara Las Vegas before moving to The Palazzo at The Venetian Resort, where the new location debuted on September 4, 2025. The reimagined house expanded to over 20,000 square feet, large enough for the room to carry its own procession without losing sight of the kitchen. Spanish decor, dim light, smoke from the grill, and Vegas quirk sit close together. The counter and the pass remain part of the performance, not hidden labor behind a closed door.
