Malbec and Cabernet at the bench

Malbec and Cabernet met at the blending bench when Federico Gambetta worked as winemaker at Bodegas CARO in Godoy Cruz, Mendoza, from 2014 to 2020. His station here sat inside a French-Argentine house shaped by Catena and Lafite Rothschild, with Mendoza fruit carrying the weight and Cabernet Sauvignon bringing another register to the glass. Gambetta came to the role after training at Universidad Nacional de Cuyo, work in Mendoza with Catena Zapata, time as a vintage worker at Cardinale in Napa Valley, and research into Malbec and climate change at INTA in Mendoza. That path matters in this cellar because CARO asks for translation rather than display: Argentine altitude, French blending discipline, still red wine, and the patience to let two varieties keep their own grammar. Gambetta later moved to Altos Las Hormigas, where his work with Malbec continues. Looking back at CARO, the line is clear enough without embellishment: he had time in the vineyard, time in research, time in other cellars, and a period here when the house’s Malbec-Cabernet focus required decisions made in the glass, not in the language around it.

A heritage winery built for red wine

The house works from an 1884 heritage winery, a brick and vaulted structure set in Mendoza at the foothills of the Andes. Its published focus is still red wine, chiefly Malbec and Cabernet Sauvignon, drawn into a small-scale program with a sustainable production philosophy. The exact cellar regime is not stated by the house, so the more useful ground is what CARO does make plain: this is a blending address, not a varietal monologue. Malbec carries Mendoza’s familiar depth and fruit; Cabernet Sauvignon brings frame, tannin and length. In a cellar tied to Lafite Rothschild as well as Catena, the method is legible even when the technical sheet stays spare. The work depends on proportion, élevage decisions, and the discipline to keep the wine balanced rather than broad. A portfolio tasting here is therefore less about range for its own sake than about reading how the same place can move between Argentine material and a French sense of structure.

Brick, vaults and quiet glass

The room has the atmosphere of a working heritage building rather than a staged salon. Exposed brick carries the eye upward to high ceilings; below, century-old underground vaults give the cellar its deeper temperature and its sense of held time. Renaissance-inspired architecture gives the house formality, but the mood stays quiet, balanced and controlled. In that setting, the glass does not need much theatre. The counter, the tasting room and the cellar all point back to the same premise: Mendoza fruit handled with restraint inside a building old enough to make speed feel out of place. When the tasting turns to the blend, the concrete detail to hold is not a slogan but a pairing of materials, Malbec and Cabernet Sauvignon in the old Bodegas CARO vaults.
