Pinot Noir first in the cellar

Pinot Noir stays at the center of the cellar brief in Chris Albrecht’s hands, winemaker at Bouchard Finlayson in Hermanus. He treats it as the estate’s main discipline, not a flourish, and his own sentence gives the measure of the work: “Pinot Noir reigns supreme – it’s the most demanding and rewarding of all.” The place asks for that kind of attention. Bouchard Finlayson sits in the Hemel-en-Aarde Valley on a 125-hectare estate, with 25 hectares of vineyards held inside a fynbos conservancy and cooled by maritime air. Albrecht’s time here runs through apprenticeship and command. He worked as assistant to Peter Finlayson from 2010 to 2017, then became head of production in 2017; he is also named as winemaker and cellar master. Stellenbosch University sits in the background of that formation, but the daily proof is bench-side, in fruit, vessel and bottle. His signature register includes Galpin Peak, Hannibal and 2015 Missionvale Chardonnay, wines described through restraint and structure rather than overt intervention.

Detail as the cellar method

Albrecht keeps the method spare in language and exacting in practice: “Detailed – it’s all in the small details.” At Bouchard Finlayson, that detail is directed toward clarity, tension and depth, with Pinot Noir carrying the heaviest part of the brief. The estate also works with Chardonnay, Sauvignon Blanc and Sangiovese, but its public identity rests strongly on cool-climate Pinot and on Galpin Peak, the bottling tied to the house’s standing in South African Pinot Noir. The production philosophy is sustainable and the scale is boutique, which matters less as a label than as a working constraint: less room for noise, more reliance on judgment at each stage. The house does not state its fermentation or ageing protocol in public detail, so the craft has to be read through the wines it names and the decisions it does disclose. The emphasis falls on freshness, balance and texture, with each vintage allowed to carry its own character rather than being pressed into a fixed cellar signature.

Oak casks and valley air

The tasting room sits inside the cellar, close to the oak casks rather than apart from them. It is an intimate room, quiet by nature, with the vineyards visible beyond and the crisp valley air coming off the Hemel-en-Aarde setting. This is not a grand-room performance of wine hospitality. The scale keeps the exchange near the work: glass, cask, vineyard, then glass again. Around the estate, fynbos holds the land in a frame that belongs to this part of the Cape, and the small vineyard footprint inside the larger property gives the place its rhythm. Pinot Noir asks for restraint in the glass and restraint in the room suits it. The cellar does not need much theatre when Galpin Peak is already on the table.
