Zinfandel sets the first note before the record is chosen; as winemaker at Bushong Vintage Company in Paso Robles, Jason Bushong keeps the work close to the material and close to the room. He came to the cellar through an internship at Fieldbrook Winery, where patience and precision set the shape of the discipline that followed. Since 2017, his station has been his own company, with the owner and winemaker roles held together rather than split between front room and cellar. In November 2017, he opened the tasting room, giving the wines a public counterpoint to the quieter decisions behind them. The career reads as accumulation: variety by variety, vintage by vintage, with scale held to small-lot terms. Bushong speaks of wine as beginning with the grape itself, in the range of varieties, regions, techniques, and styles that keep the work unfinished in the best sense. At this address, that long learning stays visible. The maker is not hidden behind the brand.

A program built around contrast

The house works in still red and still white wine, with Zinfandel named at the center of the place’s identity and the Paso Robles AVA as its appellation frame. Bushong’s signature wines include Ananda, Rose, Physical Sound, and Institutionalized V5.0, titles that make the cellar’s range feel less like a fixed ladder than a set of distinct tracks. The production scale is small-lot, which matters here because it suits the method he describes: measured choices, close attention to what each vintage asks for, and no need to make volume the proof of progress. The house does not publish fermentation or aging protocols, so the most useful read is in the shape of the program itself. Variety, texture, and restraint carry more weight than a single house style. The wines meet the room as finished work, but the discipline begins earlier, in selection, timing, and the refusal to let the process outrun the fruit.

Vinyl in the tasting room

The tasting room sits downtown with a vintage 80s current running through it: records in reach, an impressive sound system, eclectic objects, and vintage gaming that includes Star Wars pinball. Guests choose vinyl while they taste, so the room has a bench-side quality of its own, part cellar conversation and part listening session. It stays conversational rather than hushed, intimate rather than staged. The seated tasting format gives the wines time to open without turning the counter into ceremony. In that setting, Bushong’s small-lot work lands with a different kind of proximity.
