Since 2013 at the same cellar

The cellar decisions stay close to the village. Arturo Erbaggio, winemaker at Canonico & Santoli in Santa Paolina, Avellino, has held the post since 2013, guiding a small Irpinian house through repeated harvests rather than moving from bench to bench. The role is also named as oenoloog, a title that suits the work here: technical custody, vintage by vintage, in a place where Aglianico, Fiano and Greco carry the grammar of the hills.

Gennaro Canonico and Gerardo Santoli established the winery in 2013, building it around territorial labels rather than a broad catalogue. Erbaggio’s part is to hold that line in the cellar, with the founders’ Santa Paolina origin and the vineyards’ local identity kept in view. No public story of apprenticeship is given for him, and the house does not dress the work in theatrical lineage. The continuity is plainer. The same winemaker, the same producer, the same village, and a set of wines that return to Irpinia through different appellations.

Five labels from native grapes

The program rests on five territorial labels: Iside Fiano di Avellino docg, Mefite Greco di Tufo docg, Hirpus Irpinia Aglianico doc, Horus Taurasi docg, and Lupò Irpinia Spumante brut dop. The range is compact, but it asks for several kinds of attention: still white wine, still red wine, sparkling wine, stainless steel, glass, second-pass barriques, small and large wood. The estate works with 5 hectares of vineyards in Santa Paolina, Lapio and Montemarano, at 400 to 500 meters above sea level.

For Mefite Greco di Tufo Docg 2021, harvest falls in early October, followed by four months in stainless steel on fine lees and two months in glass. Hirpus Irpinia Aglianico Doc 2018 moves later, with late October harvest and a one-year passage through stainless steel and second-pass barriques. Horus Taurasi Riserva Docg 2017 takes a longer route, with one and a half years in small and large wood before bottle elevation. Those choices keep the cellar language measured rather than decorative.

The quiet of Santa Paolina

Santa Paolina gives the work a rural Campanian frame: hills, local vineyards, and the slow discipline of a producer that has chosen native varieties over novelty. The cellar is not described through spectacle. It reads through containers, timings and names on labels, through Fiano kept on fine lees, Aglianico allowed wood without being buried by it, and Taurasi Riserva given time before release.

In the tasting room, the house’s seriousness comes less from posture than from repetition. Greco, Fiano and Aglianico return in different registers, each tied to Irpinia, each asking Erbaggio to make decisions that do not erase the vineyard. The close attention belongs to the wines themselves: Iside, Mefite, Hirpus, Horus and Lupò, five names carrying the cellar’s whole argument.
