Plates kept precise, ceremony pared back

The plate comes first for Karen Keygnaert, Chef at Cantine Copine in Bruges, before the room asks anything of the guest. She has said the work plainly: “I focus on what I’m good at, i.e. Preparing refined and flavor-intensive dishes, and presenting them on beautiful plates.” That sentence sits close to the pass here. It names the discipline without dressing it up.

Keygnaert arrived at this station after 20 years in star-rewarded kitchens, with a formative stretch as chef at Restaurant A'Qi in Belgium from 2009–2016. Cantine Copine opened in 2017 as a different kind of room for that same control. The cooking did not loosen at the bench; the ritual around it did. Her past gives the plates their line and finish, while the restaurant lets the meal move with less stiffness. At this address, refinement is not treated as a performance. It is a method, held in the hands and sent out course by course.

    Equal portions, sharper choices

The kitchen works against the old division between starter and main. Portions sit in the same register, so a meal can be built by appetite rather than by inherited sequence. That choice matters because it changes how Keygnaert’s precision lands. A plate of carpaccio tonijn with amandelcreme, chili, komkommersalsa, jalapeño and ananastomaat does not need to announce whether it is an opening move or the center of the table. It needs balance, temperature, cut and acid.

The same thinking runs through the vegetable work: a taartje with mousse bloemkool, soubise vadouvan, koolrabi, sumac and scamorza; agnolotti with ricotta, gepekelde citroen and pompoen; krielpatat with knolselder, lamsoor, jus miso-walnoot and mousseline look. Fish stays close to a classic hand in pladijs with zoete aardappel, spinazie, beurre blanc and bottarga. Meat carries a fuller register in varkensnek with kweepeer, girolle, palmkool and mosterd, or bavette with provençale, poivrade artisjok and bordelaise. The wine program is curated to sit beside that range, not over it.

A factory room by the canal

The room keeps some of the old factory in view. Bare brick, a neo-industrial frame and the canal-side terrace give the restaurant a working texture before the first plate arrives. Nothing about the setting asks for silence. The noise stays conversational, the service polished without turning the floor into theatre, and the counterpoint between brick and plate suits Keygnaert’s cooking: structured, warm, exact.

From the pass, the meal moves into a room that feels built for attention rather than display. The converted brush factory gives the walls their grain; the kitchen gives the table its pace. In that setting, a financier with vijg, yoghurtsorbet and framboos reads as the same argument made sweet: clear flavors, careful placement, no borrowed ceremony. Cantine Copine closes its case with the plate, and with Karen Keygnaert still at the pass in Bruges.
