i. Biography
After 20 years in star-rewarded kitchens, Karen Keygnaert’s move to Bruges reads less like a retreat than a tightening of focus. The work there is about refinement without ceremony: dishes built for clarity of flavor, plating that stays precise, and a room that leaves more space for appetite and less for ritual.
The Path
The discipline in Karen Keygnaert’s cooking was shaped in Restaurant A'Qi in Belgium, where she served as chef from 2009–2016. That stretch set the framework for the control and precision that later became central to her own kitchen. At Cantine Copine, she carries that experience into a style that is more personal, but still exacting.
The Work Today
Cantine Copine came after two decades in star-rewarded kitchens, and it keeps the standards of that background while changing the terms of service. The work is still rigorous, but it is arranged to feel lighter at the table and less formal in the room. Karen's own description is direct: “I focus on what I’m good at, i.e. Preparing refined and flavor-intensive dishes, and presenting them on beautiful plates.” The line says exactly what the kitchen is built to do: concentrate on technique, keep the flavors sharp, and let the plate carry the message. The same approach shows up in what the restaurant removes from the equation. Set menus, rules, rituals, and dress codes are gone, leaving the diner with more latitude and the meal with less stiffness. Presentation remains part of the work, but it is no longer tied to ceremony. Hospitality becomes polished and attentive without asking the room to perform a script. That balance gives Cantine Copine its identity: highly worked food, minus the weight of inherited formality. It does not copy the star-rewarded kitchens that came before it, and it does not reject them either. It keeps the discipline, then strips away what no longer serves the meal.
In Their Words “I focus on what I’m good at, i.e. Preparing refined and flavor-intensive dishes, and presenting them on beautiful plates.” “After 20 years of cooking in star-rewarded kitchens, my philosophy is crystal clear.”
