Where They Are Now
The dining-room model uses fine-dining structure without relying on stiff choreography. In Aaron Silverman’s rooms, the register is playful, celebratory, and closer in energy to a high-energy party than a traditional tasting menu. Sustainability is framed as a working constraint in sourcing, waste, and decision-making. As Silverman has put it, "We source locally and we recycle waste. It’s our biggest long term goal. Every decision that we make, we do with sustainability in mind."
Signature
The signature set favors contrast, informality, and composed cooking that does not need to present as formal to carry structure. Aaron's signature dishes include strawberry-tomato sauce–topped spaghetti, Grandma Rose's shrimp Barsac, Lychee, Coconut, and Sausage.
In Their Words “We source locally and we recycle waste. It’s our biggest long term goal. Every decision that we make, we do with sustainability in mind.”
