Since 2016 at the Bacoli pass

Scampi meets almond milk as a memory before it becomes a plate; Angelo Carannante, chef at Caracol in Bacoli, keeps that kind of recall close to the pass. Since 2016, he has led the kitchen on the Capo Miseno promontory, inside the orbit of Cala Moresca Hotel, with the Gulf of Naples below and Procida and Ischia in sight from the terrace. His training began at Istituto Alberghiero di Pozzuoli, where the grammar of the profession took hold, then moved through work with Luigi Tramontano and into the repetition that makes a cook’s hand legible. At Caracol, that hand has settled into a clear Mediterranean register: seafood, Campi Flegrei memory, and technique kept in service of origin. The Michelin star awarded to Caracol in 2018 gave public form to work already in motion, and the restaurant remains listed with 1 star. Carannante has described his cooking as “a cuisine of memories, tied to feeling and to what I remember as a child.” The sentence matters because the plates do not treat memory as nostalgia. They use it as structure.

Seafood worked through Campi Flegrei memory

The program is built around a tasting menu rather than a loose catalogue of choices, which gives the kitchen control over sequence, temperature, and contrast. Local shellfish may appear raw with citrus and olive oil; fish can take a short sear and meet Campanian herbs; risotto works through light broth rather than weight. The method favors clean edges: reductions held back, acidity allowed to cut, texture asked to carry part of the sentence. Scampi al latte di mandorla, created in 2018 to mark the star, remains the dish that states the house most directly. Candele alla genovese with raw tuna, lemon, cocoa, and roast jus pushes the same question in another direction, setting a familiar Campanian form against marine fat, bitterness, and heat from the roast. Carannante does not erase the old dish to make the new one. He tightens the line until both can stand in the same room.

The terrace and the quiet room

The room works at low volume. Soft light holds the terrace in a solemn register, and the sea is not background so much as a second station, changing the pace of the meal without taking over the plate. Service is formal, but the better word here is measured: courses land as part of a progression, not as announcements. The counterpoint is the setting itself, a cliffside dining room at Via Faro 44, località Capo Miseno, where the view can easily become the loudest ingredient. Carannante’s kitchen answers by staying close to seafood, citrus, almond, broth, and the coastal memory that shaped his palate. Scampi al latte di mandorla at Caracol, above the Gulf of Naples, brings the place back into focus.
