    Stock before ornament

    Off cuts come first in Chef Jack Carson's kitchen at Carbone in Central, Hong Kong, where the pass has to hold both polish and thrift. His language is not about luxury ingredients; it is about reading what is already there, using stock with intent, and keeping restraint inside a room built for appetite.
