Village and Vessel Decisions
Champagne Savart farms about four hectares across Écueil and Villers-aux-Nœuds, with Pinot Noir dominant and a smaller Chardonnay holding. The estate's wines make its decisions visible by cuvée rather than through a single house-wide formula.
Three technical reference points
L'Ouverture is 100% Pinot Noir from Écueil. L'Accomplie uses 80% Pinot Noir and 20% Chardonnay from Écueil and Villers-aux-Nœuds. Le Mont Benoît comes from Villers-aux-Nœuds and is listed as 95% Pinot Noir and 5% Chardonnay. Different sites and proportions give each bottling a distinct starting material.
Cellar choices stay flexible
La Fête du Champagne describes steel as the main fermentation vessel, with increasing use of barriques; malolactic fermentation depends on the wine and year. Those choices should be described per release, not turned into a fixed rule. Frédéric Savart's public site lists wines and direct contact details but no standing tour schedule.
