Cabernet led into the hillside

Cabernet Sauvignon sets the line for Julien Fayard, winemaker at Covert Estate in Coombsville, Napa, before the cellar work begins. At this estate, co-founded by Fayard, that line runs through a small, organic program focused on still red wine: Cabernet Sauvignon, Cabernet Franc, Syrah, and Petit Verdot from the Coombsville appellation. The place suits a winemaker whose career has kept returning to Cabernet and to the measured handling of structure. Fayard’s base was set in Provence at Château Sainte Marguerite, his uncle’s estate, where vineyard and cellar work were daily disciplines rather than abstractions. He then worked at Château Lafite Rothschild and Château Smith Haut Lafitte in Bordeaux, before bringing that frame to Napa Valley. In 2006, he worked with Philippe Melka; since 2009, he has also been winemaker of Azur Wines. His current roles include Purlieu, Taplin Cellars, Caspar Estate, and Covert Estate. Here, the relevant lineage is not ornamental. It shows in the restraint of the brief: Cabernet as center, texture as consequence, the cellar as a place for decisions that should not announce themselves too loudly.

A small red program under the slope

The method Covert Estate publishes most clearly is architectural as much as agricultural. The winery sits underground, cut into a steep hillside between the vineyard and an ancient oak grove, visible only from a bird’s-eye view. That decision keeps the working space close to the vines while reducing the building’s presence on the land. The production philosophy is organic, and the scale is small. “My core focus has been Cabernet Sauvignon,” Fayard has said of his work. At Covert Estate, that focus meets a hillside cellar built for quietness rather than display. The craft emphasis is in proportion: fruit, structure, and the long handling of red wine without a public script of tanks, barrels, or release volumes.

The cave between vines and oak

Inside the cave, the room reads intimate before it reads theatrical. Bright LED lighting gives the underground space a clean edge, while the surrounding hillside keeps the winery visually tied to the vineyard and oak grove above it. Covert Estate’s setting is not a tasting-room pose attached to a working winery. The cave is the working image of the place: buried, close to the vineyard, composed around low environmental presence. In Coombsville, where Cabernet can carry both firmness and restraint, that calm suits Fayard’s vocabulary of finesse and texture.

Covert Estate holds one current-year award, but the more grounded measure here is still the bench work behind the red program. Follow Petit Verdot as it passes through this hillside cave, because Covert Estate gives those varieties the clearest language it has: vineyard, oak grove, and Coombsville.
