The cellar work begins with fruit rather than imprint. Anthony Yount, winemaker at Denner Vineyards in Paso Robles, keeps the task plain: read the vineyard, then avoid covering it. His own line, “It’s the vineyard, not the man,” suits a property planted into the hillsides of West Paso Robles, inside the Paso Robles Willow Creek District AVA, where the site gives the cellar its first instruction. Yount’s route to this bench has been practical. He worked as winemaker at Villa Creek Winery, then as consulting winemaker at Sixmilebridge Vineyards in Paso Robles and Cimento in The Rocks/Walla Walla. Today he holds the winemaking post at Denner Vineyards while also consulting for Riise and Atlas Lake. That breadth matters here because Denner is not a place that asks for noise from the cellar. Its stated posture is sustainable, estate work, and Yount’s published cellar principle is direct: “Our low-intervention approach honors the fruit that we organically farm.” The sentence carries both the farming and the restraint. It gives the maker his discipline before it gives him a style.

Rhône fruit, Bordeaux structure

Denner’s program centers on still red, still white, and still rosé wines from estate fruit, with Syrah, Grenache, Mourvèdre, Cabernet Sauvignon, Viognier, Roussanne, Petit Verdot, and Counoise among the named varieties. The house is known for powerful Rhône and Bordeaux-style wines, including Dirt Worshipper and Mother of Exiles, two bottlings that place Yount’s method against material with its own weight. Paladin and Dirt Worshipper sit at the center of his signature work, not as labels to decorate a résumé, but as evidence of the same cellar logic: preserve what the fruit brings in. That absence matters less than the line Yount repeats through the work. Low intervention only earns meaning when the fruit can carry it. At Denner, the named varieties and the Willow Creek District setting give him that test each vintage.

The cellar behind the patio light

The room above the work is quiet, relaxed, and scenic, with westside vineyard views from the patio and a fireside tasting area that pulls the scale inward. Modern architecture frames the hills without making the place feel remote from the farming around it. From the tasting room, the point of the property is visible: vineyard rows, slope, sky, and the kind of distance that lets a glass of Syrah or Roussanne read as part of a wider station. The staff is welcoming and knowledgeable, and the setting keeps returning attention to the land. Denner does not need a loud room. The hillside does enough.

Recognition held close to the work

Denner Vineyards carries current awards. The deeper continuity is Yount’s insistence that the vineyard leads and the cellar follows. If there is a thread to keep in hand here, it is the movement from estate fruit to a finished glass without losing the Willow Creek District in Dirt Worshipper.
