Agnès Paquet works vineyard first as winemaker at Domaine Agnès Paquet in Meloisey, holding the cellar to a quieter role. She has been owner and winemaker here since 2000, in the rolling hills of the Côte de Beaune and Hautes Côtes de Beaune, where Burgundy supplies the frame rather than the scenery. Her line is plain: “The idea is to work a lot in the vineyard and not so much in the winery.” That sentence gives the domaine its discipline. The hands go first to the vines, to the season, to the choice of what should reach the cellar already carrying its shape. Paquet’s own history is tied to the region with the same directness. “Wine has always been part of my life. Burgundy is my home.” The house is family owned, small in scale, and grounded in organic work across 13 hectares. The work does not announce itself through heavy cellar signature. It asks the fruit to arrive with enough clarity that the winery can remain a place of measured decisions.

Thirteen hectares and a restrained cellar

The estate’s center of gravity is Auxey-Duresses, which accounts for nearly 40% of production, with Pinot Noir, Chardonnay, Aligoté and Gamay in the program. Century-old vines sit alongside replanting by mass selection, a practical form of lineage in which the next generation of plant material comes from the character already present in the vineyard. That choice matters in Burgundy because difference is often narrow, carried in exposure, parcel, vine age and the patience to avoid smoothing everything into one house accent. Paquet’s stated method keeps the burden there. The cellar serves still red, still white and sparkling wine, but the method described by the domaine begins before fermentation, in the field. Cuvée Patience, Le Clou et la Plume and Auxey-Duresses Les Hoz give names to that range: one cuvée built around waiting, one around lift and precision, one around the specificity of Auxey-Duresses. Paquet also resists treating wine as an object set apart from use. “Wine is not an artwork, it is made to be drunk and appreciated.” That is not a modest claim. It is a technical position, tying finesse back to the table.

The cellar and the cave tasting

The place is intimate rather than performative: a vineyard estate set among the slopes of Meloisey, with a cave tasting and the quiet of a working cellar rather than a staged room. The texture belongs to Burgundy’s smaller houses, where the tasting room and cellar stay close to the bench-side decisions that made the bottles. Organic farming, old vines, mass selection and a restrained winery approach do not need theatrical explanation when the glass is in front of you. The wines carry the conversation back to parcel and season. In that setting, Paquet’s role as owner and winemaker remains visible without ceremony, because the same person who sets the direction also answers to the result in Cuvée Patience.
