    A fresh push at the pass

    The popovers arrive hot from the open kitchen while Sarah Heard, chef at Foreign & Domestic in Austin, keeps comfort close to technique. Nathan Lemley, chef-owner here since 2017, took on a restaurant with its own working memory rather than a blank page. He had already worked as head chef at Foreign & Domestic before leading the kitchen at Parkside, and his return as owner put him back at a pass he knew from the inside. Heard came to the house with a different kind of range, from banquet service at The Mansion at Judges' Hill to executive sous chef there, then kitchen leadership at The Winfield Inn. Together, they hold the room between welcome and edge: food that can begin with Gruyere popovers and move toward Boudin-Stuffed Duck Neck with Blackberry Mustard, or Tomato Leaf Risotto with pickled celery, cherry tomatoes and Pecorino. Lemley has described the work in practical terms, saying the restaurant already had success and needed “a fresh set of eyes and a good push.” Heard’s own language is just as direct: bring people in, make them comfortable, then let them trust the cooking.

    Nose to tail, root to fruit

    The method here is written into the restaurant’s working mantra: “Nose to Tail. Farm to Table. Root to Fruit.” It gives the kitchen a discipline for buying, cutting, and using. Foreign & Domestic opened in 2010, and the endurance matters because the restaurant has stayed attached to the same questions: what Austin farms can support now, how a whole animal can move through a menu, how comfort food can hold acidity, bitterness, fat and texture without losing warmth.
