    A Rhine-side station with a long memory

    Kalbsgeschnetzeltes Zurcher Art and perch set the house rhythm at Gasthaus Schupfen in Diessenhofen. The kitchen is not presented through a chef's manifesto, and no name is attached to the pass now. What it does have is a record of who has passed through it. Christian Kuchler was head chef here from 2008 to 2011, a stretch between Hotel Terminus in Siders and Gasthof Hirschen, on a Swiss route that began with training at Klinik Schloss Mammern and has since taken him to Schlossli in Bottighofen as chef-owner.

    His own sentence, that the kitchen has always been his home, fits the place plainly: heat, service, repetition, and the responsibility of keeping a restaurant moving without noise around the work. That is the register the house still runs on. In a Gasthaus, the plate and the room have to keep pace with each other, and neither is allowed to wait for the other.

    Swiss classics, kept close to the river

    The program is a la carte and traditional, built around Swiss dishes that answer to season and region rather than a fixed tasting sequence. Kalbsgeschnetzeltes Zurcher Art arrives from the old grammar of veal ragout and rosti. Fillets of perch with tartare sauce keep the river in the meal without turning it into a theme. Seasonal plates have included asparagus salad with herb vinaigrette, smoked trout, and fresh horseradish; guests have also pointed to whole regional trout, duck ravioli, duck breast, and salmon sashimi with kimchi.

    The room carries the age before the menu has to explain it. Gasthaus Schupfen is a half-timbered house dating back to 1455, with more than 650 years of history held in timber, plaster, and the scale of a small restaurant. Inside, three charming rooms keep the mood close: rustic, quiet, and shaped by the kind of service that lets conversation sit at the table. Outside, the Rhine terrace changes the register. The pass may be working through perch, trout, veal, and rosti, but the eye keeps returning to the water.

    The wine program stays curated, with local bottles, including Pinot Noir, sitting beside international selections. That is enough structure for the food. A river fish does not need a cellar built for display; it needs a glass that understands the plate and the landscape. The house is at its clearest when fillets of perch, tartare sauce, and the Rhine terrace all belong to the same service.
