Barton came through Texas Tech University, where the technical base now sits under the daily judgments of the cellar, and in 2019 he became head winemaker at Hilmy Cellars. The role places him at a small-batch, independent house working with Texas fruit and a program that asks for steadiness without sanding down difference. His language keeps calculation and instinct close together. Asked whether winemaking is technical or creative, he answered, “Both. I view them as both sides of the same coin.” At this station, that means reading fruit first, then choosing the method that lets a wine hold its shape. Tejas Blanc sits among the wines associated with Barton’s work here, part of a Texas-focused portfolio that treats the bottle as the end of a sequence rather than a separate performance.

Texas fruit through a steady hand

The program at Hilmy Cellars moves across Sangiovese, Tempranillo, Malbec, Cabernet Sauvignon, Durif, Chardonnay, Chenin Blanc, Muscat Canelli, Mourvèdre, Carignan, and Cabernet Franc, with still red, still white, rosé, and sparkling wines in the house’s range. The sourcing is sustainable, and the scale stays small-batch, with Barton’s kind of work focused on fruit, timing, cellar decision, bottle. The estate includes a Sangiovese vineyard, while the broader wine focus reaches the Texas High Plains AVA. Guinea fowl have a practical place on the property for natural pest control, a farm-side detail that belongs to the same discipline as cellar work. Nothing about it is ornamental. It is another way the place asks the maker to pay attention before intervention. Barton’s method does not separate the chemistry from the hand. Measurements guide the path, but they do not replace judgment; the fruit still has to be taken on its own terms, lot by lot, until the final wine has enough structure to carry what the season gave it.

Rustic chic is the house’s register, with a tasting room facing the vines and a covered patio that shifts the work outward when music is on and the Hill Country air allows it. The counter, the patio, and the vineyard views form a quiet triangle around Barton’s work in the cellar.
