    Rice, cut, silence at the counter

The restaurant opened in October 2023 at Delaire Graff Estate on Helshoogte Pass, taking the space Indochine had held since 2010 and narrowing it from a pan-Asian brief to a contemporary Japanese one.     The menu moves through sushi, soups, salads, cold and hot dishes, tempura, kushiyaki, and robata, with guests often composing the meal from shared plates rather than surrendering entirely to a fixed progression. The omakase format remains part of the house language, with a Chef’s Selection at lunch and an omakase at dinner, each leaving judgment to the kitchen. The restaurant’s Japanese name means jewel, a quiet nod to Delaire Graff Estate and to owner Laurence Graff OBE, but the work on the plate is more useful than the metaphor.

    Technique shows in the grain and the grill. The kitchen uses twice-polished rice, sustainable Bluefin and Yellowfin tuna, house-made soy built with bokkoms, mirin, sake, Kikkoman, and sweet potato, and local Cape Wagyu with marbling scores reaching MS 10+. Tuna nigiri, karaage chicken, and Cape Wagyu skewers carry the range: raw fish and seasoned rice at one end, crumbed chicken with chili mayonnaise at another, robata heat and truffle rice at the pass. The estate greenhouse and local sourcing keep the program tied to the farm rather than treated as scenery.

    Blue copper and the pass

    The room is bright and polished, with blue and copper tones holding the light while the Swallows in Flight installation pulls the eye upward. At the counter, the sushi corner keeps part of the method visible. The gesture is small: a hand setting fish to rice, a knife returning to the board, a plate leaving before the next one is dressed. Formal service keeps the rhythm measured, but the restaurant is not hushed into stiffness. Conversation moves under the cutlery and glassware.

    Outside, the terrace looks across the Stellenbosch Winelands toward Table Mountain, yet the room’s strongest texture is bench-side rather than panoramic. Wine and sake sit close to the food, with sommelier Duane Jansen shaping pairings from the estate context and the Japanese brief.
