Rye before the still

Whole-grain rye sits at the center of the work that Kalle Valkonen, Master Distiller, carries at Kyrö Distillery Company in Isokyrö, Finland. He comes to the still house through science first: a Master of Science, then research work growing algae at the University of Helsinki, where observation, process, and change over time were not abstractions but daily method. That formation now meets grain, fermentation, distillation, and aging at the house he helped found.

Valkonen is not an arrival into someone else’s finished language. As co-founder, Master Distiller, and Head Distiller, he belongs to Kyrö’s origin story and to its present bench-side decisions. His working range runs wider than one station, from legislation to brewing, cider and wine making, distilling, and liqueurs. That breadth matters in a distillery because the spirit is never only the cut from the still. It begins with rules, raw material, conversion, fermentation, heat, patience, and the final form a drink takes in glass.

A scientific hand on rye whisky

Valkonen’s clearest inheritance comes from whisky itself. “Sipping whisky in the Scottish country side made me to really love the craft of whisky.” The sentence is plain about where affection became discipline. At Kyrö, that discipline turns toward whole-grain rye, the grain behind the whisky and gin he distills, and toward balance as a working condition rather than a tasting-room word.

His own account of flavor stays close to the method: “My flavours are definitively the nuances originating from the process. Also the balance is important for me: raw material, process and aging!” That is the grammar of the still house. Raw material gives the first shape. Process changes it. Aging asks the maker to wait, then to judge.

The release he names as one he will not forget is Kyrö Malt pre-release 1, the distillery’s first whisky pre-release in 2017. For a maker tied to rye whisky and gin, that bottle fixes a point in the house’s own lineage, before broader reputation, before repetition could soften the memory of first release.

The still house after the cask

The room at a distillery is never only the still. It is also the warehouse, the bench where samples are judged, the back bar where a spirit proves whether it can travel beyond a neat pour. Valkonen speaks about whisky that way: “I encourage people to experiment with whisky both in cocktails and cooking!” The invitation has a practical edge. It treats the whisky as finished enough to stand alone, but not too fragile to enter another maker’s hands.

That restlessness suits the path that brought him here, from algae research to rye, from regulation to liqueurs, from cider and wine making to whisky’s longer patience. “Whisky is a never ending unpaved path which as an ex-boy scout I love to explore.” In Isokyrö, the exploration remains tied to a concrete house, a concrete grain, and a bottle with a first mark on it: Kyrö Malt pre-release 1.
