Logis de la Cadène began as a family inn in 1848, and it is Saint-Émilion’s oldest restaurant; the building still carries that sense of reception rather than spectacle. The restaurant now belongs to the Château Angelus orbit, after Stéphanie de Boüard-Rivoal brought it into the family portfolio in 2013. That matters less as a badge than as a working condition: wine, agriculture, hospitality, and the village sit close to one another here. The kitchen is not isolated from that landscape. It sits inside a house built to receive people coming through Saint-Émilion, a medieval village classified as a UNESCO World Heritage Site in 1999, where the table has always had to answer to the vines outside it.
Vegetal and marine work at tasting-menu pace
The kitchen’s register is seasonal, with a plant-and-sea emphasis that pulls Aquitaine produce into fine dining rather than treating terroir as decoration. Gamba cooks elegant, subtle plates turned resolutely toward plants and the sea, blending classicism with creativity and keeping a certain lightness. Ferme 1544, the Château Angelus farm in Saint-Loubès, supplies fruits and vegetables from a 9-hectare site inaugurated in April 2023. That farm gives the kitchen a nearby agricultural grammar: leaves, roots, fruit, herbs, and the rhythm of picking rather than ordering from abstraction.
The plates named here keep their technique close to the ingredient. Champignons arrive in a fine sarrasin tartlette with fried egg yolk and mushroom velvet. Saint-Jacques are served crue with butternut squash, osciètre caviar, sea urchin emulsion, and hazelnut butter. Merlu de ligne is cooked unilatérale, then set with artichoke ragoût, shellfish, and pine nuts. These are not rustic gestures polished for the dining room; they are bench-side decisions about cut, heat, fat, salinity, and how long a marine note can stay clear before richness takes over.
Golden stone, daylight, and the cellar
The room holds its intimacy through texture. Golden stone frames the facade. A wisteria arbour shades the terrace, and the dining rooms keep to plush, quiet surfaces rather than theatrical display. After the summer 2023 renovation, the kitchen moved into a more spacious, functional, daylight-filled position, changing the way the work meets the house. Light matters at the pass. The former restaurant space became a salon, with leather and velvet armchairs, raw wood tables, antique furniture, and a period fireplace. It gives the apéritif and the glass of Bordeaux a slower setting before the menu begins. A transparent cheese cellar sits in the sequence as both appetite and argument, a reminder that the cellar here is not an accessory to the cooking. In Saint-Émilion, the wine program is part of the method of the house.
