Since 2016 at the pass
Since 2016, Robert Chambers has held the Head Chef station at Luca in Clerkenwell, London, turning British produce through Italian method without sanding down either side. His bench language was formed in London kitchens where repetition matters: Locanda Locatelli, The Ledbury, The Square, and The Clove Club, where he was part of the brigade until 2016. At Luca, that earlier pressure settles into authorship rather than display. English asparagus can sit with Toasted Quinoa, Black Olive Crumb and Lardo di Colonnata, not as fusion theatre, but as a plate built from season, memory and cut. The role gives Chambers a clear frame: fresh pasta, British Isles ingredients, Italian technique, and enough latitude to let a dish shift when the market changes.
British produce through an Italian lens
The craft here is not a purist argument. Chambers uses Italian structure as a discipline, then lets British ingredients carry the day. The kitchen makes pasta in house, and the pasta lab doubles as a private dining room, which tells you where the restaurant places its weight. Pork sausage ragù rigatoni, grouse ravioli with potato-whiskey sauce, conchiglie with salsa rossa, roasted pine nuts and smoked ricotta, these are not garnish-led plates. They depend on dough, filling, sauce and timing arriving together. Around them sit the house signatures that regulars tend to remember first: Parmesan fries, Hereford beef fillet, Scottish halibut, John Dory with Jersey Royals, Orkney scallops, Hebridean lamb. Chambers’s own asparagus antipasti is the cleanest reading of the method. Char brings the English season forward; Lardo di Colonnata keeps the plate tied to Italy; Toasted Quinoa and Black Olive Crumb adjust texture and bitterness without crowding the asparagus.
Marble, bronze and the back terrace
The room gives the cooking space to move. Luca opens through a bar and runs deeper than the facade suggests, with an airy mid-century modern finish, white marble, bronze accents and enough hubbub to keep the service alive without swallowing conversation. The restaurant’s Clerkenwell address, near Farringdon and Smithfield, matters less as a postcard than as a working setting: a neighborhood with meat-market memory, offices, studios and lunch tables that turn into dinner tables. Further inside, the hidden back terrace and conservatory bring cobbles, foliage and a fireplace into the rhythm of the house. It is polished, but not brittle. The room can take a bowl of rigatoni seriously.
A star held by the address
Luca opened in 2016 and holds 1 Michelin star, a number that belongs to this restaurant, not to Chambers’s earlier kitchens. That matters because the work here is steadier than the usual language around modern Italian cooking allows. The menu can move between à la carte, tasting menu and prix fixe formats, yet the spine stays the same: British seasonality, Italian memory, pasta made close to service, and a kitchen that understands restraint as a tool. If the house is measured by one plate, let it be Chargrilled English Asparagus and Lardo di Colonnata.
